Notes: 6 day cold soak, all native ferment, pressed sweet into barrel for better integration of flavor.

TASTING NOTES : Soft luscious raspberry, red licorice, white pepper, river stone, sun warmed strawberry, elegant spice
ON PRODUCTION : Pinot is harvested @23,5 brix, 85% destemmed, 15% whole cluster. Grapes were cold soaked for 6 days with 1 pumpover per day.
ON FERMENTATION : Native ferment in a stainless steel with 1 punchdown and one pumpover per day. Fermented in tank for 4 weeks @ 70F. Pressed at 4 brix into barrel for better integration of oak flavor. Finished primary and secondary in barrel.
ON ELEVAGE : Aged 10 months on fine lees in 60% new, 40% neutral French Oak barrels. Stirred gently weekly
