Production: Pinot is harvested at 23.1 brix. 30% whole cluster. Grapes were cold soaked for 6 days with one pumpver per day.
Elevage: Native with one punch down and one pumpover per day. Fermented in tank for four weeks at 70* F. Press sweet, then finish fermentation in oak for better wood integration.
Oak: 60% new oak on fine lees with a batonnage per week
Tasting notes: Floral and mineral with a touch of red fruit, red roses, limestone, strawberry and raspberry
