Vineyard: This vineyard is amazing; there are 100 head of cattle raised on the
ranch. They grow the alfalfa themselves to feed these beasts. High quadrilateral
shaded canopy. Very uniform regimented farming is executed here for consistent
low yielding high quality wine.
Winemaking: At harvest 24.0 Brix 3.83ph
Punched down gently throughout the cold soak, fermentation, and
extended maceration totaling 14 days. Pressed directly to barrel
Lees-stirring every week for the first 2 months of aging
Aged 15 months in 15% French Oak, 20% Hungarian oak Barrels
350 cases produced
Notes: Very pretty fruit driven nose with subtle spice. The mouth has soft tannins,
pretty blue purple fruit. Lengthy silky finish that just keeps going.
Pairing: Enjoy this wine with a grilled ribeye or any food for that matter.
