Sparkling Wine made in the Petillant Naturel style. I picked these grapes extremely early around 20 degrees brix in order to preserve high acidity in the finished wine. The wine was pressed directly to stainless steel where it fermented for 17 days before being bottled before it was totally dry. The fermentation finished in the bottle and conditioned for 2 months before release.
