On fermentation: Fermented with native yeast started in the vineyard in a 9 ton open top fermentor. Fruit was 70% destemmed with 30% of the fruit remaining in whole cluster.
On aging: 16 months in French oak; 7% second fill puncheons, 14% neutral puncheons and 79% neutral barriques
Serving: Slightly below room temp.
Tasting notes: Bright cherry, pink peppercorn, green olive, framboise, anise, sandalwood.
