Neverland 2017 Cabernet Sauvignon, Santa Barbara County
Variatals: 90% Cabernet Sauvignon, 5% Cabernet Franc, 5% Carignan
Vineyards: 50% Tommy Town, 50% Santa Barbara Highlands
Appellation: Santa Barbara County
On aging: 10 months in 70% Neutral French/American Oak, 30% New American Oak
On fermentation: Native yeast, unfined, minimal sulfur.
Tasting notes: Layered with notes of black currant, spearmint, bacon, and smoked cedar planks, this wine seems to change almost by the second. It is plush, both in aromatics and in mouthfeel, with blueberry, violets, kirsch and creme de cassis joining notes of tobacco and cola. A truly Californian Cabernet.
